Whip up a quick, aromatic green chicken curry for a delicious weeknight dinner in just 30 minutes.
Ingredients:
  • 460g Green Curry Meal Kit
  • 18.40 gm vegetable oil
  • 250g chicken breast fillet, sliced
  • 125.00 ml broccoli florets
  • 6 green beans, sliced
  • 1/2 carrot, thinly sliced
  • 1/4 red capsicum, sliced
  • Bean sprouts, to serve, optional
  • Sliced fresh long red chilli, to serve, optional
  • 82.50 ml coriander leaves, to serve, optional
  • Lime wedges, to serve, optional
Instructions:
  • Cook the rice according to the instructions on the packet.
  • In a large deep frying pan over medium heat, sizzle curry paste in hot oil for 1 minute until aromatic. Introduce chicken and cook for 3-4 minutes. Stir in coconut milk and vegetables, cook for 5 minutes while stirring.
  • Ladle the flavorful curry and rice into bowls, then top with bean sprouts, spicy chili, fresh coriander, and a squeeze of zesty lime wedges. Enjoy this vibrant and aromatic dish!
