Green Chile Casserole

Spicy green chili casserole, ready in just one hour. Ideal for a quick and flavorful meatless meal.
Ingredients:
  • 12 corn tortillas (5 or 6 inch)
  • 2 cans (4 oz each) chopped green chiles, undrained
  • 2 1/2 cups shredded reduced-fat Monterey Jack cheese (10 oz)
  • 1 jalapeño chile, seeded, finely chopped, if desired
  • 1/2 cup shredded sharp Cheddar cheese (2 oz)
  • 2 eggs
  • 3 egg whites
  • 2 cups fat-free (skim) milk
  • 1/2 teaspoon salt
  • Dash of pepper
  • 3/4 cup chunky-style salsa
Instructions:
  • Preheat your oven to 375°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Tear 6 tortillas into bite-size pieces and layer them on the bottom of the baking dish.
  • Start by arranging a can of green chiles and half of the Monterey Jack cheese over the tortillas. Feel free to add jalapeño chili for extra kick. Repeat the layers with the remaining tortillas, green chiles, and Monterey Jack cheese. Finish by sprinkling Cheddar cheese on top.
  • Combine eggs, egg whites, milk, salt, and pepper in a small bowl, whisk until smooth, then drizzle evenly over the casserole.
  • Bake for 45 to 50 minutes until golden brown and set. Enjoy with salsa on the side.
