Make ahead cottage cheese frittata, perfect for brunch or breakfast. Reheat in microwave for easy morning meal prep.
Ingredients:
  • 10 large eggs, beaten
  • 0.5 cup all-purpose flour
  • 1 (16 ounce) container low-fat cottage cheese
  • 1 cup shredded Cheddar cheese
  • 1 (7 ounce) can diced green chile peppers, drained
  • 0.25 cup melted butter
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 9x13-inch baking dish.
  • In a large bowl, combine eggs, flour, baking powder, and salt. Fold in cottage cheese, Cheddar cheese, chile peppers, and melted butter. Transfer the mixture to the baking dish.
  • Place in the preheated oven for 15 minutes. Then, lower the temperature to 325 degrees F (165 degrees C) and bake for an additional 35 to 40 minutes.
  • Let it cool a bit before slicing and serving.
