Savory green chile stew with tender meat, potatoes, tomatoes, and spices for a flavorful and comforting meal.
Ingredients:
  • 1 tablespoon vegetable oil
  • 2 pounds cubed beef stew meat
  • 1 onion, chopped
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1.5 cups beef broth
  • 1 (4 ounce) can chopped green chile peppers
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 2 large potatoes, peeled and cubed
Instructions:
  • In a large pot over medium heat, sauté onions with meat in oil until onions become translucent, approximately 5 minutes.
  • Add diced tomatoes with flavorful chiles, beef broth, and spicy chile peppers to the pot. Mix in garlic salt and aromatic cumin. Season with salt and pepper according to your taste preference.
  • Bring the mixture to a gentle boil, then lower the heat and let it simmer for an hour. Adjust with extra beef broth or water as necessary while simmering.
  • Add the cubed potatoes and let them simmer until they are tender, approximately 30 minutes.
