Quick and delicious Mexican-inspired dish. Perfect with Spanish rice, refried beans, and tortillas!
Ingredients:
  • 4 boneless, skinless chicken breasts
  • 1.5 cups shredded pepperjack cheese
  • 1 (4 ounce) can diced green chile peppers, drained
  • 1 tablespoon dry fajita seasoning
Instructions:
  • Prepare all your beautiful ingredients.
  • Preheat your oven to 350°F (175°C) and generously coat a 9-inch square baking dish (or similar size) with cooking spray.
  • Create a generous pocket in each chicken breast half by making a deep cut along the side.
  • Fill each piece with a generous 1/4 cup of cheese and approximately 1 tablespoon of chilies. Seal tightly and secure with a toothpick to prevent any cheese from melting out during baking.
  • Transfer the stuffed chicken to the baking dish and generously season with flavorful Fajita seasoning. Finish by sprinkling the remaining cheese and chilies on top for an extra kick of flavor.
  • Bake in a preheated oven for 30 minutes until the chicken juices run clear and the cheese is melted and lightly browned.
