Creamy chicken and green chili casserole with tortillas, topped with melted cheese, for a quick and easy Mexican-inspired meal.
Ingredients:
  • 1 tablespoon butter
  • 0.5 cup chopped onion
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup sour cream
  • 8 (6 inch) corn tortillas
  • 2 (4 ounce) cans chopped green chiles, drained
  • 3 cups cubed, cooked chicken
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 (8 ounce) package shredded Monterey Jack cheese
Instructions:
  • In a large skillet over medium heat, melt butter until sizzling. Add onion and cook until tender and translucent, stirring occasionally for about 5 minutes. Stir in cream of chicken soup, sour cream, and cumin.
  • Prepare a 9x12-inch microwave-safe baking dish by greasing it and layer 4 tortillas on the bottom. Top with 1 can of green chilies, half of the chicken, half of the soup mix, half of the Cheddar cheese, and half of the Monterey Jack cheese. Repeat layers, finishing with Monterey Jack cheese.
  • Microwave on high until the casserole is bubbly and the cheese is melted, approximately 10 minutes.
