Chicken Tortilla Bake

Mexican-inspired chicken bake with creamy tomato and corn sauce, topped with melted cheese.
Ingredients:
  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup frozen whole kernel corn, thawed
  • 12 (6 inch) corn tortillas, cut into strips
  • 3 cups Tyson® Grilled & Ready® Frozen Fajita Chicken Breast Strips
  • 1 cup shredded Mexican cheese blend
Instructions:
  • Preheat your oven to 350 degrees F. Combine soup, undrained tomatoes, and corn in a medium bowl, and set it aside.
  • Layer one-third of the tortilla strips on the bottom of an ungreased 3-quart rectangular baking dish. Top with half of the Grilled & Ready® Fajita Chicken Strips followed by half of the soup mixture. Repeat the layers, finishing with a final layer of tortilla strips.
  • Bake covered for 40 minutes until bubbly around the edges. Remove cover, sprinkle with cheese, and bake for an additional 5 minutes until cheese is melted. Allow to rest for 10 minutes before serving.
