Create a festive Mexican feast with this delicious cheesy chicken tortilla bake!
Ingredients:
  • 18.20 gm olive oil
  • 1 red onion, finely chopped
  • 1 red capsicum, seeded, finely chopped
  • 5.00 gm ground cumin
  • 500g Chicken Mince
  • 425g can Mexe-Beans, undrained
  • 375g thick chunky mild salsa
  • 12 pack White Corn Tortillas
  • 180g cheddar cheese
  • 80g corn cob
  • 200g punnet Perino grape tomatoes, finely chopped
  • 62.50 ml coarsely chopped coriander
  • 21.00 gm lime juice
  • Coriander leaves, extra, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat oven to 200C. Heat oil in a 20cm ovenproof frying pan over medium heat. Set aside a quarter of the red onion. Cook the rest of the onion, capsicum, and garlic in the pan for 5 minutes until onion softens. Stir in cumin and cook for 1 minute until fragrant. Add chicken mince and cook for 5 minutes, breaking up any lumps, until cooked through.
  • Combine the beans and salsa in a saucepan. Cook over medium heat, stirring occasionally, for 5 minutes or until the sauce comes to a boil and thickens slightly. Transfer the mixture to a large heatproof bowl. Layer one-quarter of the tortillas over the base of the pan, slightly overlapping them. Spoon one-third of the mince mixture over the tortillas and sprinkle with one-quarter of the cheese. Repeat layering the tortillas, mince mixture, and cheese, ending with a layer of tortillas and cheese on top. Bake for 15 minutes or until the dish is heated through and the cheese is golden brown.
  • While the corn is cooking in boiling water for 2 minutes or until heated through, refresh it under cold running water and drain well. Combine the corn with tomato, coriander, lime juice, and reserved onion in a small bowl. Season with salt and pepper.
  • Cover the chicken bake with the flavorful corn salsa, then slice it into wedges. Garnish with fresh coriander and lime wedges before serving.
