Cheesy chicken-filled tortillas topped with zesty corn salsa for a delicious Mexican dinner.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 1 red capsicum, deseeded, chopped
  • 40.00 ml chopped fresh coriander root and stem
  • 2 garlic cloves, crushed
  • 10.00 gm ground cumin
  • 2 tsp Mexican chilli powder
  • 500g chicken mince
  • 410g can chopped tomatoes
  • 125.00 ml fresh coriander leaves, chopped
  • 250g pkt microwave black rice
  • 384g pkt (8) wholegrain tortillas, warmed
  • 65g (3/4 cup) coarsely grated cheddar
  • Low-fat sour cream, to serve
  • 2 sweetcorn cobs, husks removed
  • 1 avocado, finely chopped
  • 125.00 ml fresh coriander leaves
  • 40.00 ml drained pickled jalapeños, sliced, plus 40.00 ml pickling juice
  • 1 small lime, rind finely grated, juiced
Instructions:
  • 1. Preheat the oven to 200C/180C fan forced. 2. Heat oil in a frying pan over medium heat, then cook the onion and capsicum until softened. 3. Add coriander root, garlic, cumin, and chilli powder. Cook for 2 minutes to release fragrance.
  • Add the ground meat and cook while stirring for 5 minutes. Incorporate the tomatoes and let it simmer for 6 minutes. Season the mixture and gently fold in the fresh coriander.
  • - Prepare a 6cm-deep, 25cm (base measurement) ovenproof frying pan by greasing it. - Microwave the rice for 1 minute. - Line the pan with tortillas, forming cups by leaning them against the sides. - Fill each tortilla cup with an eighth of the rice and mince mixture. - Repeat the layering process with the remaining tortillas, rice, and mince mixture. - Sprinkle the top with cheese. - Bake for 20 minutes or until golden brown.
  • Microwave corn in a covered microwave-safe bowl on High for 3 minutes, or until tender. Cut off kernels. Mix with the rest of the ingredients. Sprinkle over tortilla bake and add a dollop of sour cream on top.
