Impress your friends with this flavorful chicken dish as the star of your next dinner party.
Ingredients:
  • 250ml (1 cup) warm water
  • 70g (2/3 cup) desiccated coconut
  • 500.00 ml firmly packed fresh coriander leaves
  • 250.00 ml firmly packed fresh mint leaves
  • 3 fresh long green chillies, coarsely chopped
  • 8 garlic cloves, crushed
  • 6cm-piece fresh ginger, peeled, finely grated
  • 1.8kg (size 18) whole fresh chicken or thawed frozen chicken
  • 60ml (1/4 cup) vegetable oil
  • 2 brown onions, halved, thinly sliced
  • Salt & freshly ground black pepper
Instructions:
  • In a bowl, mix water and coconut, cover with plastic wrap, and let it soak for 1 hour. Transfer soaked coconut mixture along with coriander, mint, chili, garlic, and ginger to a blender or food processor. Blend until smooth.
  • Rinse the chicken cavity under cold water, then pat dry with a paper towel. Place the chicken breast-side down on a work surface. Use poultry shears to cut along both sides of the backbone and discard it. Cut the breast in half and then use a sharp knife to separate the thighs from the breasts. Cut the drumsticks from the thighs and remove the wings from the breasts.
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Add the chicken and cook, turning occasionally, for about 5 minutes until golden brown. Transfer the cooked chicken to a plate.
  • Heat pan until it's nice and hot. Cook the onion, stirring occasionally, for 10 minutes until dark brown. Lower the heat, then add the chicken and coconut mixture. Simmer, covered, for 35-40 minutes until cooked, stirring occasionally. Remove from heat, season with salt and pepper to taste. Transfer to a serving platter and serve right away.
