Green tomato chutney

Savory chutney perfect for meats, ham, and sandwiches.
Ingredients:
  • 20.00 gm mixed spice
  • 1.3kg green (unripe) tomatoes, chopped
  • 2 medium brown onions, chopped
  • 2 Granny Smith apples, peeled, cored, chopped
  • 560mls (2 1/4 cups) malt vinegar
  • 220g (1 cup) demerara sugar
  • 4.80 gm salt, to taste
Instructions:
  • Wrap the mixed spice in a small piece of muslin. In a large heavy-based saucepan, add the spice bag, green tomatoes, onions, apples, malt vinegar, demerara sugar, and salt. Bring to a boil.
  • Simmer uncovered for 1 hour, stirring occasionally, until the chutney thickens with a small amount of liquid remaining.
  • Discard the spice bag and carefully transfer the hot chutney into hot sterilised jars.
  • Seal the jars right away and flip them over for 2 minutes. Then, turn the jars upright and let them cool to room temperature.
  • Simply label and date the jars, then store in a cool, dark place for up to 3 months.
