Delicious Southern fried green tomatoes - a summer must-have using unripe green tomatoes.
Ingredients:
  • 3 medium-sized, firm green tomatoes
  • Salt
  • 1 tablespoon Cajun seasoning (optional)
  • 1/2 cup milk or buttermilk
  • 1/3 cup fine white cornmeal (or regular cornmeal, if you can't find it)
  • 1/2 cup fine dry bread crumbs
  • 1/4 cup peanut oil, canola oil, or olive oil for frying
Instructions:
  • Prepare the green tomatoes: Slice them into 1/2 inch pieces and lightly salt. Allow them to rest for 5 minutes.
  • Prepare three shallow bowls with the coating ingredients: In the first bowl, mix together the flour and Cajun seasoning (if desired). In the second bowl, whisk the buttermilk and egg. In the third bowl, combine the breadcrumbs and cornmeal. Stir the egg and buttermilk mixture until well blended.
  • Coat tomato slices: Heat oil in a skillet over medium heat. Dredge green tomato slices in flour-seasoning, then dip in buttermilk-egg mixture, and finish with cornmeal-breadcrumb mix.
  • Fry the breaded tomatoes in batches: Cook half of the coated tomato slices in a skillet for 3 to 5 minutes on each side until golden brown. Place the cooked tomatoes on paper towels to drain.
