Green tomatoes chopped and fried with bread crumbs, fennel seeds, and mustard powder for a unique twist on a classic dish.
Ingredients:
  • 2 cups chopped green tomatoes, or more to taste
  • 1 egg, lightly beaten
  • 1 cup bread crumbs
  • 1 tablespoon garlic powder
  • 1 tablespoon fennel seeds
  • 1 tablespoon mustard powder
  • 5 tablespoons mild oil, such as canola
  • 0.5 teaspoon salt
Instructions:
  • Warm the oil in a wide skillet over medium heat.
  • Mix ripe, juicy tomatoes with fresh eggs in a bowl until the tomatoes are fully coated in the egg mixture.
  • In a small bowl, combine bread crumbs, garlic powder, fennel seeds, mustard powder, and salt. Spread mixture over tomatoes and toss to coat. Cook tomatoes in hot oil, stirring often, until tender, about 15 minutes.
