Crunchy pork meatball schnitzels recipe

Delicious mini meatball schnitzels, perfect for any party!
Ingredients:
  • 500g extra lean pork mince
  • 5.00 gm Greek seasoning
  • 2 cloves garlic, crushed
  • 2 tsp dried oregano
  • 2 spring onions, finely chopped
  • 1 lemon, rind finely grated
  • 22g (1/4 cup) fresh, finely grated parmesan
  • 35g (1/4 cup) plain flour
  • 1 egg, lightly beaten
  • 115g (1 cup) dried multigrain breadcrumb
  • Tomato chutney, to serve
  • Mustard, to serve, optional
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a large baking tray with non-stick baking paper. In a large bowl, combine pork mince, seasoning, garlic, oregano, spring onions, lemon, and parmesan. Season with salt and pepper and mix thoroughly.
  • Shape heaped tablespoons of mixture into walnut-sized balls. Gently dredge balls in flour, then dip into a mixture of beaten egg and water. Roll the balls in breadcrumbs, making sure they are evenly coated. Place coated balls on a tray and continue the process until all balls are coated.
  • Generously coat balls with oil spray. Bake until they are crispy and golden, for about 25-30 minutes. Enjoy plain or with tomato chutney and mustard, if desired.
