Quick and healthy green soup, packed with flavor, gluten-free and low-calorie, ready in 17 minutes!
Ingredients:
  • 18.20 gm olive oil, plus extra, to drizzle
  • 3 green shallots, chopped
  • 2cm-piece ginger, grated
  • 1 garlic clove, coarsely chopped
  • 230g (1 1/2 cups) frozen peas
  • 100g baby spinach, plus extra, to serve
  • 400ml can light coconut milk
  • 500ml (2 cups) gluten-free vegetable stock
  • 125.00 ml fresh coriander sprigs, plus extra, to serve
  • Fried shallots, to serve
  • Sliced fresh red chilli, to serve (optional)
Instructions:
  • In a large saucepan over medium heat, sauté the fragrant green shallot, ginger, and garlic in hot oil for 1 minute. Stir in the peas and spinach and cook for 2-3 minutes until the peas are tender.
  • Set aside 1 tablespoon of coconut milk. Combine stock, coriander sprigs, and the rest of the coconut milk in a pan. Cook gently for 3 minutes without boiling. Take off the heat and blend until smooth using a stick blender. Reheat on medium heat until warmed through.
  • Ladle the soup into individual bowls. Drizzle with the remaining coconut milk and a touch of olive oil. Garnish with additional coriander, baby spinach, fried shallots, and sliced red chili, if desired.
