Quick and nutritious green curry for a satisfying meal after a long day.
Ingredients:
  • 18.20 gm peanut oil
  • 700g chicken breast fillets, trimmed, cut into 3cm pieces
  • 1 large brown onion, finely chopped
  • 87.50 gm green curry paste
  • 400ml can light coconut milk
  • 191.25 gm chicken style liquid stock
  • 24.40 gm fish sauce
  • 42.00 gm lime juice
  • 100g snake beans, cut into 4cm lengths
  • 1 large zucchini, roughly chopped
  • 125.00 ml fresh coriander leaves
  • steamed jasmine rice, to serve
Instructions:
  • 1. Heat oil in a large saucepan over high heat. Add chicken and cook for 4 to 5 minutes until browned. Stir in onion and cook for 2 minutes until softened. Add curry paste and cook for 30 seconds until fragrant.
  • Combine the coconut milk, stock, fish sauce, and lime juice in a pot and bring to a boil. Reduce the heat to medium-low and simmer until slightly thickened, about 10 minutes. Stir in the beans and zucchini and cook for an additional 5 minutes until tender.
  • Combine the coriander, stirring well. Serve alongside steamed rice.
