Festive Australian treat for Santa's reindeer with vibrant colors.
Ingredients:
  • 130g (1 1/2 cups) desiccated coconut
  • 20 drops green food colouring
  • 175g bought plain single-square sponge cake
  • 425g (2 3/4 cups) icing sugar mixture, sifted
  • 125ml (1/2 cup) hot water
  • 5 drops green food colouring, extra
Instructions:
  • Place the coconut in a plastic bag, add the food coloring, and mix well by shaking and rubbing. Spread the colored coconut onto a plate.
  • Trim the cake crusts with a large serrated knife and cut the cake into 18 squares. Mix icing sugar in a heatproof bowl over simmering water with hot water and food coloring until smooth and runny, whisking for 5 minutes.
  • Dip each cake square in the icing mixture using 2 forks to coat, then shake off excess. Roll in the coconut mixture to evenly coat and transfer to a wire rack to set.
