Green papaya salad

Savor the harmonious blend of duck, papaya, chili, and peanuts in this delightful salad.
Ingredients:
  • 1 roast duck*
  • 1 bunch snake beans, end trimmed, cut into 3cm lengths
  • 1 medium (about 1kg) green papaya*, peeled, seeded, grated
  • 250g punnet cherry tomatoes, halved
  • 1 small red chilli, finely chopped
  • 125.00 ml roasted peanuts, crushed
  • 132.50 gm Thai dressing (see notes)
Instructions:
  • Separate the tender meat from the roast duck and finely shred it before setting it aside.
  • Quickly cook the snake beans in boiling water for 1 minute, then cool them in cold water. Drain and mix in a large bowl with green papaya, tomatoes, duck meat, chili, and half of the peanuts. Add dressing and mix well. Serve topped with the rest of the peanuts.
