Master this South-East Asian staple for a delicious Thai side dish.
Ingredients:
  • 30.00 ml grated palm sugar or brown sugar
  • 24.40 gm fish sauce
  • 21.00 gm lime juice
  • 1 tsp sesame oil
  • 1 long red chilli, seeds removed, finely chopped
  • 1/2 green papaya (see note), shredded (a mandoline is ideal)
  • 250g punnet cherry tomatoes, halved
  • 160g bean sprout
  • 40.00 ml fresh mint, chopped
  • 40.00 ml fresh coriander, chopped
Instructions:
  • In a bowl, mix sugar, fish sauce, lime juice, sesame oil, and chili until the sugar is dissolved. In a separate bowl, combine the remaining ingredients, then pour the dressing over and toss to mix well.
