Zesty green rice: long-grain rice cooked in a flavorful blend of green chiles, cilantro, and tomatillos for a delicious side dish.
Ingredients:
  • 0.75 cup chopped romaine lettuce
  • 0.75 cup chopped fresh cilantro
  • 1 (4 ounce) can chopped green chilies
  • 0.33333334326744 cup chopped tomatillos
  • 2 tablespoons green onions, chopped
  • 2 cups chicken broth, or more as needed
  • 2 tablespoons olive oil
  • 1.5 cups long-grain rice
Instructions:
  • Add lettuce, cilantro, green chiles, tomatillos, green onions, and garlic to a blender and blend until smooth, gradually incorporating broth until you reach 3 cups of liquid.
  • In a 2- to 3-quart saucepan, heat oil over medium-high heat. Saute rice until opaque, approximately 5 minutes. Pour in broth mixture and salt, bring to a boil, then cover and simmer over low heat until rice is tender, about 18 to 20 minutes.
