Green salad with pickled grapes recipe

Christmas salad with sweet, juicy grapes.
Ingredients:
  • 1 spring onion bulb, thinly sliced
  • 40.00 ml white wine vinegar
  • 36.40 gm extra virgin olive oil
  • 10.00 gm caster sugar
  • 250g bunch green seedless grapes, stems removed, halved
  • 1 gem lettuce, leaves separated
  • 1/2 small radicchio, leaves separated
  • 500.00 ml watercress sprigs
  • 4 baby cucumbers, sliced
  • 1 avocado, sliced
  • 1/2 bunch small red radishes, thinly sliced
  • 82.50 ml roasted almond kernels, roughly chopped
Instructions:
  • Place the onion in a small bowl and cover it with boiling water. Let it stand for 10 minutes, then drain the water.
  • In a bowl, mix vinegar, oil, and sugar. Gently toss in the grapes and onion until coated. Let it sit for 10 minutes to meld the flavors.
  • In a serving bowl, mix together lettuces and watercress. Top with cucumber, avocado, and radish. Spoon grape mixture over the salad. Sprinkle with almonds and season with salt and pepper. Serve and enjoy!
