Elevate your salad with crisp snow peas, ripe avocado, and mixed greens for a delightful twist.
Ingredients:
  • 40g (1/4 cup) pine nuts
  • 150g snow peas, topped
  • 2 Lebanese cucumbers, halved lengthways
  • 1 mignonette lettuce, washed, dried
  • 1 green coral lettuce, washed, dried
  • 2 avocados, peeled, seeds removed, sliced
  • 100g snow pea sprouts, trimmed
  • 60mls (1/4 cup) white wine vinegar
  • 125mls (1/2 cup) extra virgin olive oil
  • 1 tsp drained canned green peppercorns, crushed
Instructions:
  • Heat your oven to 180°C.
  • Spread the pine nuts on a baking tray and toast in a preheated oven until golden, which should take about 5 minutes. Remove from the oven and allow to cool.
  • First, bring a small saucepan of water to a boil. Add snow peas and cook for 1 minute, then drain and rinse under cold water. Next, deseed and slice the cucumbers. Finally, make the dressing by combining vinegar, olive oil, and peppercorns in a screw-top jar. Shake well before using.
  • In a large serving bowl, mix snow peas, cucumbers, both lettuces, avocados, snow pea sprouts, and half of the pine nuts. Drizzle dressing over the salad, toss to combine thoroughly. Serve sprinkled with the remaining pine nuts.
