Green salad with herbs and garlic croutons

Elevate your salad with a flavorful French shallot dressing.
Ingredients:
  • 80ml (1/3 cup) extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 6 slices white bread, crusts removed, cut into 1cm pieces
  • 2 baby cos lettuces, outer leaves removed, leaves separated
  • 40.00 ml chopped fresh continental parsley
  • 40.00 ml chopped fresh chives
  • 40.00 ml chopped fresh tarragon
  • 20.00 ml white wine vinegar
  • 11.80 gm Dijon mustard
  • 5.00 gm caster sugar
  • 2 French shallots, peeled, finely chopped
Instructions:
  • Prepare the dressing by whisking together vinegar, mustard, and sugar until well combined. Stir in the shallot, then gradually whisk in the oil until thickened. Season with salt and pepper to taste.
  • In a medium frying pan over low heat, heat the oil. Add garlic and cook, stirring occasionally, until golden for 3-5 minutes. Remove and discard the garlic using a slotted spoon.
  • Turn the heat up to medium and cook half of the bread in the pan, stirring occasionally, for 2-3 minutes until it turns golden. Transfer to a plate lined with paper towel to cool. Repeat the process with the remaining bread, making sure to reheat the pan between batches.
  • Combine bread, lettuce, parsley, chive, and tarragon in a large bowl. Drizzle with the dressing and toss well. Serve.
