Green shakshuka recipe

Try this flavorful green shakshuka for a weekend breakfast treat!
Ingredients:
  • 1 leek, pale section only, thinly sliced
  • 3.75 gm ground cumin
  • 3.75 gm smoked paprika
  • 250g pkt frozen spinach, just thawed, excess liquid removed
  • 300ml light thickened cream
  • 180g pea
  • 200g sugar snap peas, trimmed
  • 4 Free Range Eggs
  • 100g drained Persian fetta, crumbled
  • Chilli sauce, to serve
Instructions:
  • In a large non-stick frying pan over medium heat, warm the oil. Sauté the leek, stirring occasionally, for 5 minutes until softened. Sprinkle in cumin and paprika, cook for 1 minute until fragrant.
  • Stir in spinach and cream, cook for 1-2 mins until warm. Add peas and sugar snap peas, then simmer.
  • Create 4 wells in the pea mixture using the back of a large metal spoon. Gently crack one egg into each well. Cook with a partial cover for 5 minutes until yolks reach your desired consistency. Finish by sprinkling with feta and drizzling with chili sauce before serving.
