Transform Betty Crocker™ white cake mix into spooky Halloween cupcakes with tangy lime green 'slime' frosting to delight and disgust your guests!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 2 teaspoons grated lime peel
  • 2 teaspoons vanilla
  • 3/4 cup butter, softened
  • 4 oz (half of 8-oz package) cream cheese, softened
  • 1 box (16 oz) powdered sugar
  • 3 tablespoons lime juice
  • 4 to 5 drops neon green paste food color
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake mix for cupcakes as instructed on the box using water, oil, and egg whites. Enhance the flavor by incorporating lime peel and 1 teaspoon of vanilla extract. Allow the cupcakes to cool for 10 minutes, then transfer them from the pans to cooling racks. Let them cool completely before serving.
  • In a large bowl, cream together butter and cream cheese until smooth using an electric mixer. Mix in powdered sugar until fully incorporated. Then add lime juice, 1 teaspoon vanilla, and food color, and beat until frosting is smooth and easy to spread. Frost the cupcakes with the frosting.
