Indulge in a zesty lemon cake, ideal for welcoming the sunny days of spring.
Ingredients:
  • 1 tablespoon finely ground green tea powder
  • 3/4 cup milk
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1 1/3 cups granulated sugar
  • 2 1/2 teaspoons baking powder
  • 2/3 cup butter, softened
  • 1 teaspoon vanilla
  • 5 egg whites
  • 2 1/2 cups butter, softened
  • 4 teaspoons grated lemon peel
  • 2 to 3 tablespoons lemon juice
  • 6 cups powdered sugar
  • Lemon peel
Instructions:
  • Preheat your oven to 350°F. Grease and lightly flour 2 (9-inch) round pans. In a 1-cup microwavable measuring cup, mix tea powder with milk. Microwave on High for 30 to 45 seconds until warm. Stir until tea is dissolved and allow to cool for 10 minutes.
  • In a large bowl, use an electric mixer to beat the tea mixture and all other cake ingredients (except egg whites) on low speed for 30 seconds. Increase speed to high and beat for 2 minutes, occasionally scraping down the sides of the bowl. Add egg whites and beat on high for another 2 minutes, scraping down the sides of the bowl as needed. Transfer the mixture into pans.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, then remove from pans and transfer to cooling racks. Let cool completely for about 1 hour.
  • In a medium bowl, whip together 2 1/2 cups of butter, 4 teaspoons of lemon peel, and lemon juice using an electric mixer on medium speed for 30 seconds. Slowly add powdered sugar and continue to whip for 2 to 3 minutes until the mixture is light and fluffy.
  • Start by elegantly positioning one cake layer on a cake plate with the top side facing down. Generously spread 1 1/2 cups of frosting on top. Carefully place the second layer with the top side up and proceed to frost the sides and top of the cake. Finally, unleash your creativity as you decorate with the remaining frosting and crown the masterpiece with a charming garnish of lemon peel.
