Elevate your tea time with these delicious tea-infused treats!
Ingredients:
  • 4 green tea bags
  • 62.50 gm boiling water
  • 225.00 gm self-raising flour
  • 64.38 gm milk
  • 262.50 gm icing sugar mixture
  • 10g butter, melted
  • Lemon zest, to decorate
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced and prepare a 12-hole muffin pan by lining it with paper cases.
  • - Place 2 tea bags in a heatproof jug and pour in boiling water. Let steep for 5 minutes, then remove and discard the tea bags. - Take the leaves out of the remaining tea bags. - In a bowl, combine the tea leaves, butter, sugar, eggs, flour, and milk. - Use an electric mixer on low speed to mix for 30 seconds, then increase to medium and beat for 3 minutes until the mixture is pale and thick.
  • Spoon the batter into cupcake cases and bake for 20 minutes or until a skewer inserted in the center of a cake comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Remove the cases if desired.
  • For the icing, combine icing sugar and butter in a bowl. Mix in lemon juice until smooth. Spread icing on each cupcake, garnish with lemon zest, allow to set for 10 minutes, and then serve.
