Elegant almond-infused green tea cupcakes.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup vegetable oil butter spread (such as Smart Balance®)
  • 0.5 cup granular no-calorie sucralose sweetener (such as Splenda®)
  • 0.5 cup white sugar
  • 3 egg whites
  • 1 teaspoon almond extract
  • 1.5 cups cake flour
  • 2 teaspoons baking powder
  • 2 tablespoons green tea powder (matcha)
  • 0.5 cup nonfat milk
Instructions:
  • Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin pan by greasing it or lining it with paper liners.
  • In a large bowl, use an electric mixer to beat together butter, vegetable oil spread, sweetener, and sugar until light and fluffy. The mixture should visibly lighten in color. Add room-temperature egg whites one at a time, ensuring each egg is fully mixed in before adding the next. Mix in vanilla and almond extracts with the last egg. In a small bowl, combine cake flour, baking powder, and green tea powder. Gradually add the flour mixture and milk to the batter, mixing until just combined. Pour the batter into the prepared pan.
  • Bake in the preheated oven for around 20 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
