Green tomato relish

Festive tomato relish elevates holiday ham.
Ingredients:
  • 18.20 gm olive oil
  • 3 eschalots, thinly sliced
  • 1 tsp yellow mustard seeds
  • 1/4 tsp chilli flakes
  • 1/4 tsp ground allspice
  • 100g caster sugar
  • 40.00 ml aged white wine vinegar or cider vinegar
  • 4 green tomatoes, quartered, cut into thin slices
Instructions:
  • In a frying pan over medium heat, swirl oil and sauté eschalots, mustard seeds, chili, allspice, and 1 teaspoon of sea salt for 8 minutes. Introduce sugar, vinegar, and tomatoes. Simmer for 10 minutes until tomatoes are tender.
