Green Tomato Relish

Tangy green tomato relish with fresh tomatoes, onions, peppers, and spices - perfect for sandwiches and cheese boards.
Ingredients:
  • 24 large green tomatoes
  • 12 large onions
  • 3 red bell peppers, halved and seeded
  • 3 green bell peppers, halved and seeded
  • cheesecloth
  • 5 cups white sugar
  • 2 cups cider vinegar
  • 3 tablespoons celery seed
  • 3 tablespoons mustard seed
  • 1 tablespoon salt
Instructions:
  • In batches, pulse tomatoes, onions, red bell peppers, and green bell peppers until coarsely ground in a food processor. Line a large colander with cheesecloth over a bowl or sink and transfer the tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot over high heat, mix the drained tomato mixture with sugar, vinegar, celery seed, mustard seed, and salt. Bring to a boil. Reduce heat to low and simmer for 5 minutes, stirring occasionally.
  • Prepare a dozen 1-pint jars or six 1-quart jars by sterilizing them. Carefully fill the sterilized jars with relish, making sure there are no gaps or air bubbles. Fill the jars to the brim and seal them with the lids securely.
  • Position a rack at the base of a large stockpot and fill halfway with boiling water. Gently submerge the jars into the pot with a holder, ensuring a 2-inch gap between each jar. Add more boiling water as needed to ensure the jars are submerged by 2 inches. Bring the water to a vigorous boil, cover, and process for 30 minutes.
  • After removing the jars from the pot, place them on a cloth-covered or wooden surface, spaced a few inches apart, to cool. Once cool, press the top of each lid with your finger to confirm a tight seal (lid does not move). Store the relish for up to a year.
