Vibrant greens and lentils stewed with nutritional yeast for a nutritious, vegan meal full of flavor.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 8 cups vegetable broth
  • 1 cup lentils
  • 2 cups chopped Russian kale, or more to taste
  • 2 cups chopped Swiss chard, or more to taste
  • 2 cups chopped mustard greens, or more to taste
  • 0.5 cup nutritional yeast
  • 1 tablespoon garlic powder
  • 2 teaspoons thyme
  • 1 teaspoon ground black pepper
  • salt to taste
Instructions:
  • In a large pot over medium heat, sauté onions in olive oil until soft, for about 3 minutes. Then, pour in vegetable broth and bring to a boil over high heat. Stir in lentils, reduce heat to medium, and simmer until soft, about 45 minutes.
  • Combine kale, Swiss chard, and mustard greens in the broth; simmer until tender, for 5 to 10 minutes. Add nutritional yeast, garlic powder, thyme, pepper, and salt. Allow the soup to cool for about 10 minutes before serving.
  • Blend the soup until smooth, then return it to the pot and heat for around 5 minutes.
