Upgrade your Friday night with a vibrant broccoli pasta dish that combines both the stalks and florets for a flavorful twist on a classic comfort meal. Go green with this delicious and satisfying recipe!
Ingredients:
  • 1 large leek
  • 3 cloves of garlic
  • 400 g purple sprouting or tenderstem broccoli
  • 40 g unsalted butter
  • ½ a bunch of fresh thyme (15g)
  • 2 tablespoons plain flour
  • 1 litre semi-skimmed milk
  • 450 g dried macaroni
  • 30 g Parmesan cheese
  • 150 g mature Cheddar cheese
  • 50 g flaked almonds
Instructions:
  • Preheat the oven. Prepare leek, garlic, and broccoli. Sauté in butter with thyme until softened. Add flour and milk, simmer until thickened. Cook pasta, grate Parmesan and Cheddar into sauce. Blend with spinach until smooth. Season and mix in pasta and broccoli. Transfer to baking dish, top with Cheddar and almonds. Bake until golden and bubbly. Enjoy!
