Griddled steak with horseradish sauce

Master the art of cooking the perfect steak with a fiery homemade horseradish kick.
Ingredients:
  • ½ a bunch of fresh rosemary (15g)
  • olive oil
  • 2 x 200 g beef fillet, sirloin or rib-eye steaks
  • 1 large clove of garlic
  • 2 tablespoons good-quality natural yoghurt
  • 1 tablespoon grated horseradish fresh or jarred
  • 1 lemon
  • extra virgin olive oil
Instructions:
  • Preheat a griddle pan over high heat until very hot. Finely chop the rosemary leaves and mix with sea salt and black pepper on a clean board. Coat both sides of the steaks with olive oil and roll them in the rosemary mixture. In a small bowl, combine yogurt and horseradish with salt, pepper, lemon juice, and olive oil. Adjust the horseradish to taste. Press the steaks onto the hot pan and cook for about 1 minute on each side. Rub the charred side of the meat with a halved garlic clove. For medium-rare, cook for 3 to 4 minutes per side; for well-done, cook a few minutes longer. Let the steaks rest on a plate for a few minutes, drizzle with olive oil. Serve the steaks with horseradish sauce and resting juices. Optionally, slice the steaks and serve on a bed of greens with the sauce on the side.
