Grilled new potatoes and asparagus - a delightful seasonal side dish.
Ingredients:
  • 2 tablespoons olive oil
  • 1/2 teaspoon lemon-pepper seasoning
  • 6 small red potatoes (about 3/4 lb), unpeeled, quartered
  • 1 lb fresh asparagus spears, trimmed
Instructions:
  • Preheat gas or charcoal grill. Combine 1 tablespoon of oil, 1/4 teaspoon of salt, and 1/4 teaspoon of lemon-pepper seasoning in a large shallow bowl. Add potatoes and toss to coat evenly. Transfer potatoes to a grill basket.
  • Grill the potatoes in a basket over medium heat for 15 minutes, shaking occasionally to evenly cook them.
  • Next, transfer the asparagus spears to the same shallow bowl. Drizzle the remaining tablespoon of oil and sprinkle the remaining 1/4 teaspoon each of salt and lemon-pepper seasoning over the asparagus. Toss everything together until the asparagus is evenly coated.
  • Toss asparagus with potatoes in the grill basket. Continue grilling for another 10 minutes until both vegetables are tender, shaking the basket occasionally to ensure even cooking and mixing.
