Grilled Beef with Spinach and Strawberry Salad

Impress with marinated sirloin as the star of this simple yet elegant dish.
Ingredients:
  • 1 lb boneless beef sirloin steak
  • 3/4 cup balsamic vinaigrette dressing
  • 6 cups baby spinach leaves
  • 2 cups halved fresh strawberries
  • 1/4 cup sliced green onions (4 medium)
  • 1/4 cup slivered almonds, toasted
Instructions:
  • Place the steak in a large nonmetal dish or resealable food-storage plastic bag. Pour 1/4 cup of the vinaigrette dressing over the steak and evenly coat it. Cover the dish or seal the bag tightly, then refrigerate for at least 4 hours or overnight to marinate.
  • Prepare the grill by heating it using either gas or charcoal. Once the grill is hot, take the steak out of the marinade and dispose of the marinade. Place the steak on the preheated gas grill over medium heat or on charcoal grill over medium coals, then cover with the grill lid. Grill for 10 to 12 minutes, flipping it once, until it reaches your preferred level of doneness. Slice the steak thinly on a diagonal against the grain before serving.
  • Combine fresh spinach leaves, juicy strawberries, sliced onions, and the remaining 1/2 cup of flavorful vinaigrette dressing in a large bowl and toss gently until evenly mixed.
  • Spoon spinach mixture onto plates, layer steak slices on top, and finish with a sprinkle of almonds.
