Elevate chicken breasts with zesty homemade bruschetta topping for a vibrant and flavorful main dish.
Ingredients:
  • 2 tomatoes, washed and cored
  • 1 clove garlic, peeled and minced
  • 4 Tablespoons extra virgin olive oil
  • 1 teaspoon salt, or to taste, divided use
  • 1/2 teaspoon ground black pepper, or to taste, divided use
  • 2 Tablespoons torn fresh basil leaves
  • 4 boneless, skinless chicken breast halves,
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sweet paprika
  • 1/2 cup purchased croutons
  • Fresh basil for garnish
Instructions:
  • Collect all the ingredients for the recipe and preheat an outdoor grill to medium heat.
  • Prepare the bruschetta by finely chopping the tomatoes over a bowl to retain their juices. Mix in olive oil, garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Toss in torn basil leaves and adjust seasoning with salt and pepper to your liking. Set the flavorful bruschetta mixture aside for later use.
  • In a sealed plastic bag, gently crush croutons into smaller pieces using a heavy spoon, ensuring they don't get too crushed. Keep aside.
  • Lay chicken breasts on a plate and gently dry them with paper towels. Season both sides of the chicken with the remaining salt, pepper, garlic powder, and sweet paprika. For thick pieces, tenderize to around 1/2-inch thickness.
  • Once the grill is hot, remove any debris from the grates, then lightly coat them with olive oil using a saturated paper towel and tongs.
  • Grill seasoned chicken breasts on oiled grates until no longer pink in the center and juices run clear, about 4 to 5 minutes per side, adjusting for thickness. Ensure the internal temperature reaches 165°F (74°C) when using a meat thermometer.
  • Place a generous portion of bruschetta on each grilled chicken breast, followed by a sprinkle of crumbled croutons. Finish by garnishing with fresh basil leaves.
