Grilled maple brown sugar glazed butternut squash - a quick and easy side dish.
Ingredients:
  • 1 butternut squash, cubed
  • 2 tablespoons butter
  • 0.25 cup maple syrup
  • 2 tablespoons brown sugar
Instructions:
  • Preheat the grill outdoors to medium heat and lightly oil the grate.
  • Bring a large pot of water to a boil over high heat. Cook squash until almost tender but still firm, about 5 to 8 minutes.
  • In a skillet over gentle heat, melt butter. Add maple syrup and brown sugar, stirring until sugar dissolves, approximately 5 minutes.
  • Place the partially cooked squash on a large sheet of heavy-duty aluminum foil. Brush it with a generous amount of the maple glaze, saving some for later. Fold the foil to seal the goodness inside.
  • Grill the squash until tender, about 10 to 15 minutes, basting with the glaze and turning halfway through cooking.
