Versatile grilled chicken salad with seasonal fruit options.
Ingredients:
  • 1 pound skinless, boneless chicken breast halves
  • 0.5 cup pecans
  • 0.33333334326744 cup red wine vinegar
  • 0.5 cup white sugar
  • 1 cup vegetable oil
  • 0.5 onion, minced
  • 1 teaspoon ground mustard
  • 0.25 teaspoon ground white pepper
  • 2 heads Bibb lettuce - rinsed, dried and torn
  • 1 cup sliced fresh strawberries
Instructions:
  • Preheat the grill on high heat and lightly oil the grate.
  • Grill chicken for approximately 8 minutes on each side until the juices run clear. Allow the chicken to cool, then slice it and set aside.
  • Toast pecans in a dry skillet over medium-high heat until fragrant, stirring frequently for about 8 minutes. Set aside.
  • For the dressing, blend red wine vinegar, sugar, vegetable oil, onion, mustard, salt, and pepper until smooth.
  • Place a bed of fresh lettuce on individual serving plates. Add tender grilled chicken slices, juicy strawberries, and crunchy pecans on top. Finish by elegantly drizzling with dressing before serving.
