Grilled chilli dressing

Toast chillies on stove for depth and intensity in dressing.
Ingredients:
  • 3 fresh red chillies
  • 10 tablespoons extra virgin olive oil
  • 3½ tablespoons fresh lemon juice
  • ½ a bunch of fresh mint (15g) leaves picked and finely chopped
Instructions:
  • Prick the chillies with a sharp knife to prevent them from bursting. Using metal tongs, blacken and blister the chillies over a gas flame or in the oven under a hot grill. Place the blackened chillies in a bowl, cover with cling film, and let them steam for 15 minutes. Peel off the skins, remove the white seeds, and finely chop the flesh. Mix the chopped chillies with oil, lemon juice, mint, salt, and pepper in a bowl.
