Grilled Corn Salad

Delicious grilled corn salad with roasted corn, fresh veggies, and cilantro for a vibrant BBQ side or summer treat.
Ingredients:
  • 6 ears freshly shucked corn
  • 1 medium green bell pepper, diced
  • 2 medium Roma (plum) tomatoes, diced
  • 0.25 cup diced red onion
  • 0.5 bunch fresh cilantro, chopped, or more to taste
  • 2 teaspoons olive oil, or to taste
  • salt and ground black pepper to taste
Instructions:
  • Get your outdoor grill ready by heating it to a gentle medium heat, then give the grate a light coating of oil.
  • Grill the corn until tender with charred spots, about 10 minutes, then let it cool slightly for 5 to 10 minutes before handling.
  • Slice warm corn kernels directly into a large bowl using a knife, discarding the cob. Repeat with remaining corn.
  • Combine bell pepper, tomatoes, onion, cilantro, olive oil, salt, and pepper in a bowl and mix thoroughly. Allow the flavors to meld together for at least 30 minutes.
