Grilled corn salad with cherry tomatoes, bell pepper, and fresh basil is a delightful summer dish your family will adore!
Ingredients:
  • 8 ears corn in the husk
  • 2 cups quartered cherry tomatoes
  • 1 large red bell pepper, chopped
  • 1 small red onion, chopped
  • 0.25 cup chopped fresh basil
  • 0.5 cup olive oil
  • 0.25 cup rice vinegar
  • 2 tablespoons lime juice
  • 1.25 teaspoons salt
  • 0.5 teaspoon grated lime zest
  • 0.25 teaspoon freshly ground black pepper
Instructions:
  • Prepare the corn by trimming off any excess husk and silk. Place the corn in a large bowl filled with water and let it soak for 1 hour.
  • Preheat the grill outdoors to medium heat and lightly oil the grate.
  • Grill the corn, turning every 6 minutes to cook all 4 sides evenly, for about 24 minutes. Let the corn cool until easily handled.
  • Peel husks off cooled corn, then slice kernels into a serving bowl. Mix in cherry tomatoes, red pepper, onion, and basil.
  • In a small bowl, combine olive oil, rice vinegar, lime juice, salt, garlic, lime zest, and pepper. Drizzle the dressing over the corn salad and mix well. Chill in the fridge for at least 1 hour before serving.
