Delicious grilled fish tacos with creamy avocado sauce, made with mahi mahi or any white fish.
Ingredients:
  • 2 pounds mahi mahi fillets
  • 4.5 teaspoons chipotle chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon freshly ground black pepper
  • 1 large avocado - peeled, pitted, and cubed
  • 0.25 cup chopped cilantro
  • nonstick cooking spray
  • 8 (8 inch) flour tortillas, warmed
  • 3 cups shredded cabbage
  • 3 medium limes, quartered
Instructions:
  • Prepare the fish by washing and drying it, then dividing it into four even pieces.
  • Combine 4 teaspoons each of chili powder, cumin, onion powder, garlic powder, salt, and pepper in a bowl. Coat the fish evenly in the mixture, patting gently for full coverage. Chill in the refrigerator for 30 minutes.
  • In a separate bowl, combine ripe avocado and mix in creamy sour cream, fresh cilantro, and the rest of the zesty chili powder until a smooth mixture forms.
  • Preheat your outdoor grill until it reaches a delightful medium-high heat and give the grate a light coating of oil. Next, generously spray the inside of a grill basket with nonstick spray before placing the fish inside.
  • Grill the fish in the basket over the preheated grill until it flakes easily with a fork, about 3 to 5 minutes per side. Transfer the cooked fish to a plate and break it into bite-sized pieces.
  • Assemble fish on cozy tortillas, add crunchy cabbage and a generous scoop of creamy avocado sauce. Serve with a side of fresh lime wedges.
