Grilled Garlic, Lemon and Pepper Butterflied Chicken

Create a mouthwatering grilled chicken with a simple, flavor-packed 5-ingredient marinade.
Ingredients:
  • 1 whole chicken (3 to 3 1/2 lb)
  • 1/4 cup fresh lemon juice
  • 2 teaspoons cracked black pepper
  • 6 cloves garlic, crushed
Instructions:
  • Lay the chicken, breast side down, on a cutting board. Use kitchen scissors or a sharp knife to cut along one side of the backbone from the neck to the tail, then repeat on the other side of the backbone to remove it.
  • Flip the chicken breast side up and spread out the legs and wings. Use the palm of your hand to press down on the breast bone and flatten the chicken.
  • Combine all remaining ingredients in a large resealable plastic bag. Add chicken, breast side down, seal the bag, and shake to coat the chicken evenly. Refrigerate for 8 hours or overnight, turning the bag occasionally to ensure even marinating.
  • Preheat the gas or charcoal grill on high heat for at least 15 minutes before placing the chicken on the grill.
  • Take the chicken out of the marinade and dispose of the marinade. Lower the grill heat to medium. Put the chicken on the grill, breast side up, and cook covered for 20 minutes. Flip the chicken over, breast side down, and continue cooking covered for 10 to 15 minutes until browned and the chicken juices run clear when the thickest part is cut to the bone (170°F for breasts; 180°F for thighs and drumsticks). Cut the chicken into 4 pieces for serving.
