Grilled garlic prawns in prosciutto

Ingredients:
  • 12 cooked king prawns
  • 50g unsalted butter, softened
  • 1 clove garlic, crushed
  • 20.00 ml finely chopped fresh parsley
  • 20.00 ml finely chopped fresh coriander
  • 2 anchovies, finely chopped
  • Freshly ground black pepper
  • 200g prosciutto
Instructions:
  • Prepare the prawns by peeling and de-veining them, making sure to leave the tails intact. Skewer the prawns lengthwise, straightening them as you go.
  • In a small bowl, mix together butter, garlic, parsley, coriander, and anchovies. Season with pepper. Spread butter mixture on each slice of prosciutto. Wrap each prawn with a slice of buttered prosciutto (butter side inside), leaving the tail exposed.
  • Grill prawns on a heated grill plate or barbeque, turning occasionally, until prosciutto is golden and prawns are heated through, about 3 minutes. Serve hot.
