Elevate chicken with colorful veggies and zesty Italian dressing for a delicious and healthy meal.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 medium yellow bell pepper, cut into 4 wedges
  • 4 plum (Roma) tomatoes, cut in half
  • 1 small red onion, cut into 8 wedges
  • 1/2 cup reduced-fat Italian dressing
Instructions:
  • Preheat a gas or charcoal grill. Cut 4 sheets of heavy-duty foil (measuring 18x12 inches each). On the center of each sheet, place 1 chicken breast, 1 bell pepper wedge, 2 tomato halves, and 2 onion wedges. Drizzle 2 tablespoons of dressing over the chicken and vegetable mix on each foil packet.
  • Wrap each packet tightly by bringing up 2 sides of foil over the chicken and vegetables so edges meet. Seal edges with a tight 1/2-inch fold, then fold again to allow for heat circulation and expansion. Seal the remaining sides.
  • Grill the packets over medium heat, rotating halfway through, for 18 to 22 minutes until the chicken juices run clear and the temperature reaches 170°F. Serve the packets on plates, cut an X on top, and elegantly unfold the foil.
