Grilled Mexican Citrus Chicken

Try this winning Mexican grilled chicken recipe with a zesty citrus marinade for tender, moist results. Perfect for a backyard grill-out with loved ones. Enjoy grilling!
Ingredients:
  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 1/2 cup olive or vegetable oil
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped onion
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper sauce
  • 2 cut-up whole chickens (3 to 3 1/2 lb each)
Instructions:
  • Combine all ingredients except for the chicken in a large shallow glass dish or a 2-gallon resealable food-storage plastic bag. Add the chicken and ensure it is evenly coated with the marinade. Cover the dish or seal the bag, then refrigerate for at least 3 hours, but no longer than 24 hours, turning the chicken occasionally.
  • Preheat gas or charcoal grill. Take chicken out of the marinade and set aside the marinade. Place chicken on the grill, skin side up. Cover and grill over medium heat for 15 to 20 minutes.
  • Continue grilling the chicken while turning and brushing with marinade every so often for 20 to 40 minutes, or until the juices run clear when the thickest part is cut (170°F for breasts; 180°F for thighs and legs). Dispose of any leftover marinade.
