Elevate your burger game with our Mushroom Swiss twist on this classic favorite.
Ingredients:
  • 1 pound ground beef (for juicy burgers, 80/20 is good)
  • 1 ounce dried mushrooms, such as porcinis or morels
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon kosher salt, or more to taste
  • 1/2 pound fresh shiitake mushrooms, stemmed and sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • Kosher salt
  • 4 to 6 slices Swiss cheese
  • Burger buns
Instructions:
  • Prepare the dried mushrooms: Use a food processor or a clean coffee grinder (grind raw rice to clean it), pulse the dry mushrooms until they form a powder. Discard any large unground mushroom pieces, small pieces are okay.
  • Prepare the burger mixture: Use your hands to gently combine the meat, salt, mushroom powder, black pepper, and Worcestershire sauce in a large bowl until just combined. Avoid overmixing to maintain a tender texture.
  • Shape the meat into 3 to 4 patties weighing 1/4 to 1/3 pound each, making sure to create a shallow indentation at the center of each patty to ensure even cooking.
  • Get the grill ready by preheating it to high, direct heat. Place a cast iron skillet on the grill grates to heat up, or heat it on the stovetop over high heat as an alternative.
  • Heat the skillet until a drop of water sizzles, then dry-sauté the mushrooms until they release their water, about 2-3 minutes. Add onions and olive oil, toss to combine, and sauté over high heat for 1 minute. Season with salt and continue to cook until onions soften and begin to brown. Remove skillet from heat and transfer mushrooms to a bowl.
  • Grill the burgers: Cook the patties over high, direct heat for 5-8 minutes per side, adjusting as needed based on thickness and grill temperature, until cooked to your liking.
  • Melt Swiss cheese over nearly cooked burgers.
  • Grill the buns: Brush the burger buns with a touch of olive oil and toast on the griddle or grill grates for 1 to 2 minutes.
  • Build the burgers: Put a patty on a bun and pile on the sautéed onions and mushrooms.
