Elevate your fresh catch with grilled pesto, tomatoes, and olives for a flavor-packed dish.
Ingredients:
  • 1 can (14.5 oz) stewed tomatoes, undrained
  • 1 can (2 1/4 oz) sliced ripe olives, drained
  • 1/4 cup pesto
  • 2 lb whitefish or other lean fish fillet
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley
Instructions:
  • Preheat the grill on high. Combine tomatoes, olives, and pesto in a medium non-metallic bowl.
  • Lay the fish on a large sheet of heavy-duty foil. Season with salt and pepper, then spread the tomato mixture over the fish. Fold the foil edges together tightly, leaving room for heat to circulate. Seal the edges securely.
  • Grill the fish over medium heat until it easily flakes with a fork, then garnish with parsley before serving.
