Grilled polenta wedges

Whip up tasty polenta as a quick and easy side dish for any meal.
Ingredients:
  • 1L (4 cups) chicken style liquid stock
  • 170g (1 cup) polenta
  • Olive oil
  • Grated parmesan
Instructions:
  • Prepare a 20 x 30cm pan by coating it with olive oil and lining the base and two long sides with baking paper. Heat chicken stock in a saucepan until boiling over medium-high heat. Reduce heat to low and slowly mix in polenta until well combined. Cook for 12 minutes or until soft, stirring occasionally. Transfer the polenta mixture to the lined tray and allow it to set for 15 minutes. Preheat a barbecue grill to high and brush the flat plate with olive oil. Cut the set polenta into 8 wedges, then cut each wedge in half diagonally. Brush both sides with oil and grill for 2 minutes on each side until crispy. Finish by sprinkling with grated parmesan before serving.
