Grilled Pork and Apples with Red Onion Chutney

"Grilled pork: quick and spicy dinner in 60 minutes!"
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 1/2 cups chopped red onion
  • 1/3 cup red wine vinegar
  • 1/4 cup diced dried fruit and raisin mixture
  • 1/4 teaspoon pumpkin pie spice
  • 2 pork tenderloins (3/4 pound each)
  • 3 apples, cored and cut crosswise into 1/2-inch rings
Instructions:
  • In a 2-quart saucepan, heat oil over medium heat. Cook onion for about 8 minutes, stirring often, until tender. In a small bowl, combine 2 tablespoons of brown sugar and 4 teaspoons of vinegar; set aside.
  • Combine the rest of the brown sugar, vinegar, dried fruits, and pumpkin pie spice with the onion. Bring it to a boil, then simmer on low heat for 20 to 25 minutes until the fruits plump up and the mixture thickens. Remove from heat.
  • Prepare your grill for direct heat. Gently coat the pork with some of the remaining brown sugar mixture. Grill the pork over medium heat, 4 to 6 inches from the coals or flame. Cover and grill for 18 to 22 minutes, flipping once, until the pork is medium-rare.
  • Brush apple rings gently with the remaining brown sugar mixture and grill for the last 10 minutes alongside the pork. Slice pork diagonally and serve with grilled apples and chutney.
